Throughout the history of humanity, people invented lots of knives of different shapes and kinds. They greatly vary depending on their application. These days, you can find knives for hunting, military purposes, kitchen, tourism, and so on. Any activity requires a special design. For instance, when you select a reliable and safe hunting knife, it's better to avoid folding knives with pivots, hollow handles, and gut hooks. The right blade length is important, as well as a convenient shape of the handle. A full tang design (i.e. when the handle and blade use the same continuous piece of steel) is preferable for a reliable and strong hunting knife.
Another important factor is steel the knife is made of. In general, ideal steel should perfectly combine wear resistance, corrosion resistance, chipping resistance, and ease of manufacture. The last factor greatly determines its cost. Besides that, ease of sharpening does matter – for example, knives with a serrated blade are much harder to sharpen.
